As the week progresses and Friday is around the corner, what do you do with all of the leftover Challah? Well, one great answer to this is: Challah Croutons. These are so tasty and are the perfect garnish for your weekday soups and salads. This simple recipe takes only minutes to prepare and really livens up your daily dishes!

– 4 Slices of Challah
– 2-3 tablespoons of Organic Olive Oil
– 1 tablespoon of Dijon Mustard (or any type of country mustard)
– 1 teaspoon of Fresh Herbs, I choose Thyme this occasion but you can use rosemary or other herbs as well

1) Preheat oven to 350 degrees F (180 degrees C). Cut the Challah into small diced pieces. Whisk together the mustard, thyme and olive oil in a small bowl. Toss the Challah in the mixture and place on a baking sheet. Bake for 15-17 minutes until golden brown and crispy.
